Weekend Update

I took the weekend off from my computer.  I didn’t even check my email on my phone.  I just finished cleaning out my inbox.  It seriously took 2.5 hours.  More coffee please…

We also took the weekend off from Paleo – but not bacon…  Friday night Big Dude and I ate almost a whole deep dish pizza from Costco while catching up on The Americans and The Following.  Have you seen any of those things??  Let me just say, it was worth it.  And if you’re not watching either of those shows, I highly recommend both.  I even got my Dad into them while my parents were staying with us last time.  And I promise, I don’t just love The Following because Kevin Bacon is in it.  😉

Speaking of bacon… Have you seen this??  I’m really hoping it’s not an April Fools Joke.

My neighbor and new BFF Nicole is the manager of Klinger’s Bakery, and sometimes she brings us treats.  Saturday, she brought us a Blueberry Braid Coffee Cake.  I might have eaten 75% of it.  It was soooo good.  Between that and the workout I got at Petra Cliffs, I was out for the count in a serious carb crash from like 4-7 Saturday night.  I had to lie down in bed.  Not sure that one was a smart choice.  I finally got up and went to the store to get the rest of the ingredients for Brunch on Sunday around 8.  Came home with chicken wings for dinner.  I had no energy left to cook real food.

Sunday Brunch was amazing.  We had eggs, bacon, sausage, fruit salad, baked apple french toast and Bacon Coffee Cake with Bacon Caramel Glaze, adapted from this recipe and when I say adapted, I mean I screwed up the recipe somewhere and had to improvise… I forgot to take a pic of the initial meal, but here’s what I had for leftovers at lunch time.

After that we took a trip to Lowe’s to check out patio paver, fire pits and furniture.  It sparked our fancy for a fire.

We raided the construction dumpster a few doors down for the scrap wood and roasted hot dogs and s’mores for dinner.  Best Easter Ever.

Seriously?

Sorry its been a couple days! My bro and his GF were here for the weekend and my parents came too making the sleepover party carry to every room!! The cool part is we had enough beds and bathrooms for everyone!! We ate Paleo all meals. I didn’t take pics because they don’t know I do this… And I didn’t want to give it away, but here’s a rundown for your pleasure…
Gumbo, lots o eggs and bacon, spaghetti squash special sauce, krabby patties, chicken curry noodle bowl, Mexican chocolate pots, creme brûlée (fail), bacon bark, liar bars, & Paleo trail mix… I think that’s it. Everyone left by noon yesterday and I was pooped and didn’t get home till almost 6 so Big Dude brought home sushi. Yeah yah, not Paleo. Didn’t care. Still don’t.
So now we’re up to today… Snow day…
Ok, for reals, I know that about 4:00 my brain shuts off. Sometimes I squeak out some extra time doing mindless tasks, but today I was behind because I spent 2 hours shoveling the driveway and maybe I spent a little too much time on Facebook creating a new Avatar so I could make cartoons about me too. Cause we know my ego needs more attention here. Soooo, maybe I forgot to back up a file I was working on and maybe I lost about an hours worth of research and work. Teach me to work past 5.

And because it was a snow day for Little Dude, I didn’t get to the grocery store as planned. So dinner was a throw down. I decided to make that Paleo pizza I wanted to try with the dough of the Paleo Garlic Bread. I tripled the recipe. Had to borrow a 1/2 cup of olive oil from my neighbor! I had some bacon, ground pork and chicken andouille sausage. Put some sauce on and then the cooked up meat and put it in the oven for about 40 minutes…

Totally stuck to the pizza stone, but tasted like heaven, heavy garlicky meaty heaven.

And then my neighbor brought over dessert. Not Paleo. So we will pretend I didn’t eat it and I won’t tell you what it was or how good it tasted. Or how my tummy gurgled after. Yah, no. We can also pretend I’m not watching Snooki & JWoww right now.

Sweatpants Sunday

I freaking hate the time change.  I think it should be outlawed.  I woke up at 8, but it was really 9 and then I was late.  I hate being late.  My Mom was coming to take Little Dude snowboarding and Dad was gonna hang out with me today.  Everything ended up fine and all on time, but man.  I hate that immediate feeling of doom because you’re late.

I think I ate half of this loaf of Paleo Banana Bread today.  I put in several handfuls of walnuts and some deep dark chocolate chips.  It was AMAZEBALLS!  And maybe I had a couple extra shots of espresso.  It was a good day.

Dad and I hung out, talked and watched some Archer and The Americans.  Both are stellar shows.  When he took a nap I made the Gumbo with 2 lbs of shrimp, andouille sausage and sweet Italian sausage, extra veggies, spinach, and the Cauliflower rice.  I also made a side of Paleo Garlic Bread.  I don’t know what I did wrong, but the consistency was all wrong and it was more like drop biscuits.  No worries, they were still delish.  I think I’m gonna try to make a pizza dough out of it this week sometime.  Maybe fill it like a calzone?

Oh, and since the creme brûlée wasn’t ready last night, I served it up tonight after the Gumbo.  I can’t post a recipe, cause I kinda mixed a couple different ones together, but it was solo good.  Actually, I’ll try to recreate the recipe this week sometime.  My bro and his GF are coming to visit.  If I nail it, I’ll post it.  Anyway, it was awesome.

Sugar and spice (not refined sugar you ninny, who do you think I am?)

I actually woke up before 7 on purpose today! I had to go bust down a door before a meeting at 9:30 and take some pics of my newest upcoming listing. Guess what?! It has orange shag carpeting and blue toilets. I’m psyched!!

After I got home and uploaded my photos and did some work, I Googled “Paleo sausage shrimp”, cause that’s what I need to use for dinner and I came across this Gumbo recipe on PaleoOMG and I was like OMG! 😉

And then seriously like 2 minutes later I got an email from nom nom paleo that there was a new blog up, so of course I read it and there was another mention of these Mexican Chocolate Pots de Creme, so of course I read that too. And so it was decided it was Sugar and Spice night.

I didn’t have all the ingredients for the gumbo, so I improvised, but im pleased to report that it was surprisingly easy. More so than the curry I think. And I made the dessert during the simmer times of the dinner. Oh, the gumbo called for a cup and a half of shrimps… I used a 2 lb bag of prawns. I also used that chicken sausage from Costco instead of Andouille and 1/2 lb Mckenzie Ground Sausage instead of the shredded pork. My cauliflower had turned so I skipped that. Put it in the crockpot to keep warm till dinner and went to pick up Little Dude and a friend to go to Petra Cliffs. When we got back the house smelled so amazingly rich with spices I couldn’t wait to dig in!

Hindsight, I should have added spinach or kale for more volume. No matter, it kicked A$$!! I ate 2 bowls. The only reason I didn’t have a 3rd was dessert.

A note about the dessert, don’t leave it unattended. Mine may have boiled for a minute but it still came out wonderful. I didn’t use her whipped cream recipe though because I just got this iSi whip thing and had a can of coconut milk and a tablespoon of vanilla already chillin, so I gave that a whirl. Holy whipped coconut Batman! I’m in love. It was like a spicy chocolate mousse. I’ll be honest, when I spilled a little during the pour, I totally licked the counter.

Vampires suck

It seriously smells like garlic in my house tonight!!  I made some more Spaghetti Squash with that amazing Bove’s Basil Sauce (disclaimer – there is a mistake as of the date of this blog on the Bove’s website and Mark Bove is working to get it fixed.  There is NO cheese in the Basil sauce.  It is PALEO Friendly) with extra veggies and chicken sausage, but I had a real craving for garlic bread, so I went a-Googling and came across these garlic balls and figured it was worth a try.  OMG.  It’s a really good thing my mom isn’t here tonight because these things are potent and she hates garlic, I mean HATES.  We think she’s part Vampire, but we still love her.  I also made sausage meatballs.  We had balls.  he he he…

Wanna hear something funny?  Big Dude was like, “what about vegetables?”  PFFT!!!

I’m sorry, did you say squash?

When I was about 8 years old my mom made squash for dinner. I didn’t want to eat it, but there were starving children in Africa and I had to clean my plate if I wanted any dessert. So I choked it down. Literally. After I swallowed the last bite, I sang out, “clean plate club!!” Triumphant and ready for dessert, but my ever wise older brother said, “Not for long…” And then I vomited it all back up and onto my previously clean plate.
I really haven’t eaten squash or any other cooked orange vegetable since. So when I keep hearing about spaghetti squash on all the Paleo blogs, I figured, what’s the worst that could happen? I throw up on my plate!? Ha! Wouldn’t be the first time!! So I slathered my spaghetti squash with Ghee and put it in the oven to bake. Then I pulled out my favorite marinara, Bove’s of Vermont Basil

Chopped up some peppers, onions and garlic and set them to simmer while the squash did its thing.
I’m so happy to tell you I didn’t throw up! But I’m so sorry I forgot to take a photo because it smelled so good I couldn’t wait to dig into it and the my plate was a mess and I can’t post messy photos, only messy stories! Next time!
